Bruschetta with avocado and egg

Here’s a simple and delicious recipe for bruschetta with avocado and egg:

Ingredients:

  • 1 baguette or ciabatta, sliced
  • 2 ripe avocados
  • 2-4 eggs (depending on how many servings)
  • 1-2 cloves of garlic, halved
  • Olive oil
  • Salt and pepper
  • Fresh herbs (like basil or cilantro) for garnish
  • Optional: cherry tomatoes, red pepper flakes, or lemon juice for added flavor

Instructions:

  1. Prepare the Bread:

    • Preheat your oven to 400°F (200°C).
    • Arrange the sliced bread on a baking sheet. Brush each slice lightly with olive oil.
    • Bake for about 5-7 minutes, or until golden and crisp.
  2. Prepare the Avocado:

    • While the bread is toasting, scoop the avocados into a bowl. Mash them with a fork, adding salt, pepper, and a splash of lemon juice if desired.
  3. Cook the Eggs:

    • You can poach, scramble, or fry the eggs according to your preference. For poached eggs, bring a pot of water to a gentle simmer, add a splash of vinegar, and carefully crack the eggs in, cooking for about 3-4 minutes.
  4. Assemble the Bruschetta:

    • Once the bread is ready, rub the cut side of the garlic on each slice for flavor. Spread a generous layer of the mashed avocado on each piece of bread.
    • Top with the cooked eggs. If you like, add sliced cherry tomatoes, a sprinkle of red pepper flakes, or fresh herbs for garnish.
  5. Serve:

    • Enjoy your bruschetta warm as a delicious breakfast or snack!
